Well the kids have been asking for cookies and after the holidays I thought something a little healthier might be in order. Here is a healthier twist on gluten free oatmeal cookies. Hope you enjoy!
Healthier gluten and dairy free oatmeal cookies
1 ripe mashed banana
½ cup of soy free earth balance butter
½ cup of coconut sugar
½ cup of agave
2 teaspoons of gluten free vanilla
1 egg or egg replacement
3 tablespoons of coconut creamer
½ cup of almond meal
¼ cup of flax seeds
½ cup of quinoa flakes
2 ½ cups of gluten free oatmeal
½ cup of gluten free flour
½ teaspoon of baking soda
¼ teaspoon of salt
1 bag of enjoy life chocolate chunks *optional*
Cream together butter, sugar, agave, vanilla, cream and egg. Add dry ingredients to Mixture.
Chill one hour or more.
Preheat oven to 375. Drop by tablespoonfuls
onto cookie sheets lined with parchment paper.
Cook 10 to 12 minutes. Let
cookies stand on cookie sheet 2 minutes and then remove to cool completely on
wire racks.
