Well Here Goes Nothing!!!


Here is my first attempt at a blog.  Why even bother do you ask?  I am just a regular old mom who was desperate to find a way to help my boys Gaven and Gideon.   I started cooking gluten and dairy free for my boys.  I also try to eliminate other processed and dye filled ingredients.  I guess what makes it so different from other gluten free recipes is that it has to pass my boy's tastes tests!  They want things that look and taste like the real deal!

Many of my friends have asked for my recipes so instead of sending them out to many different people, I decided to start a simple blog that people could just go to.

For my first recipie I have decided to post one of the boys favorites!  Here it is my GFCF banana chocolate chip muffins.

 GFCF Banana Chocolate Chip Muffins

Ingredients:

1 cup of gluten free flour ( I like Jules flour)
1/2 cup of quinoa flour or flakes (I use this to add protein but you can just add more flour if you like)
3/4 tsp of salt
1/2 tsp of baking soda
1/2 tsp of baking powder (make sure it is gf)
1 tsp of xanthan gum
*Mix dry items together and set aside

*In a separate bowl beat together
4 to five tablespoons of Earth Balance Soy Free Spread
2 large eggs or egg substitute
1/3 cup of coconut sugar
1/3 cup of blue agave 
2 large very ripe bananas-mashed

*Slowly add the dry ingredients to the wet ingredients until well blended.  Then add and blend into mixture:
1 cup of Enjoy life semi sweet chocolate chips or chunks (dairy, nut and soy free)
2 tbsp of chia seeds or flax meal or both!

Fill muffin cups 2/3 of the way and bake in a preheated oven at 350 degrees for 20 to 25 minutes.
( I love the Large Baking Cups from the company If You Care.  They work great and the muffins do not stick to the cups!)
